As the Spring time weather is here what food for thought comes to mind?

Our moods, thoughts,desires and tastes for food seems to be affected by the seasons among other influences. Some restaurants will change the menu based on seasonal favorites which is beneficial to the local producers and growers of food as well as satisfying our change in our food cravings. I feel this is a smart move. Our weather of late is unseasonably warm and spring-like. I don't know about you but my tastes are changing from heavy, warm comfort food and leaning more towards lighter foods including fresh, uncooked veggies in salads and sandwiches. At this time of year I will start to create interesting salad combinations with proteins and vegetables and grains. My children always would say that, "no one makes a sandwich like Mom" and so Salad and sandwiches are a thing for dinner in my world. Now that the warmer weather is here I tend to start exercising more outside again and so my hunger has increased. After a 6 mile bike ride today, I had a wonderful sandwich of turkey, Havarti, lettuce, tomato, red onion and relish aioli on Ezekiel toast. Healthy, filling yet light.
