Meet The Chef

Born into the restaurant business and, raised in an Italian-American family from NY, I am third generation of women chefs and entrepreneurs. My mother was a restaurateur and chef of her Long Island, NY french restaurant, Rose Cottage and my grandmother was a restaurateur and chef of her Italian restaurant, Amatos. I apprenticed as a pastry chef just after high school, in the kitchen of my mother’s  restaurant, mastering the art of culinary in the area of gourmet desserts. My inborn talent as a cook also flourished as I ventured out into many entrepreneurial endeavors. After 20 years in the field, I taught baking and cooking classes in the local high school Adult Education department; operated my own wholesale dessert business and small retail bakery. I started my business through the kitchen of my family’s restaurant and after a while moved into a store front called, Piece-a-cake bakery where I providing wholesale desserts to Long Island, NY restaurants as well as the operation of my own off-premises catering business.

I enrolled into college after rewarding satisfaction from my life in the food service industry while working as a full time cake decorator. I achieved my Education degree as a licensed, New York State and Virginia educator of Culinary Instruction and Family and Consumer Sciences, using all of my strengths in psychology, family dynamics, human and adolescent development, as well as my life time professional experience as a chef, caterer and pastry chef. I recently completed my M.Ed. at University of Mary Washington, VA. I have enjoyed the pleasure of teaching High School Culinary Arts in Northern VA in the Culinary Arts Program that I started back in 2011.

Teaching is one of my two greatest passions, the other being preparing food for the enjoyment of others. And so I have to say...

"Senza passione non si dispone di una cucina non si dispone di passione!" which translates from Italian to...

"Without passion you do not have a kitchen...without a kitchen you do not have  passion!"

Currently cooking class gatherings are done remotely so all guests can cook in the comfort and safety of their own kitchens while coming together and following Chef Albano as a guide using the zoom online platform.
